You can back up Apple Watch to your computer, but it is stored as part of your iPhone's backup. You can't directly back up your Apple Watch data. You need to back up your iPhone, which indirectly includes your Apple Watch data. There are two ways to back up the Apple Watch to a Computer.
Method 1. EaseUS MobiMover
If the data on the Apple Watch is synced with your iPhone, you can back up the iPhone to a computer with EaseUS MobiMover. EaseUS MobiMover allows you to back up all the data on your iPhone or select specific data types or files to back up. It makes the backup process quicker. Method 2. iCloud

Step 3. Go to the iCloud website to access the backup data. If you need them, download them to the computer.
