No, Quick Start does not transfer everything from iPhone to iPhone. While Quick Start makes setting up a new iPhone much easier, it does not automatically transfer all your data. You'll still need to restore from an iCloud or iTunes backup to get everything from your old iPhone onto your new one unless you're using iOS 12.4+, which adds the additional "iPhone Migration" feature.
What Quick Start Transfers
- Core settings like Wi-Fi passwords, Apple ID, and iCloud Keychain
- Some settings like Apple Pay, Siri preferences, and location services
What Quick Start Does Not Transfer
- Apps, documents, messages, photos, and other data
